I find this fascinating.  I do this kind of thing all the time – but not really for pay.  Every time I have a friend who writes a book or an article, or a thesis, I read it and give feedback on overall structure and flow.  This is the type of thing I would like to be doing more of.  Is it a real field?  What would you call it?  Structural editing?  How much do people charge for it?
